Pacific Saury

The Pacific saury (Cololabis saira), also known as sanma or mackerel pike, is a member of the family Scomberesocidae. Its name literally means "autumn knife fish" in Chinese and Japanese, referring to its elongated, knife-like body shape and peak autumn season. This surface-dwelling migratory fish is widely distributed in the North Pacific's temperate waters. Rich in EPA and DHA omega-3 fatty acids, the Pacific saury is highly nutritious. It is most famously prepared salted and grilled whole, making it an iconic autumn delicacy in Japanese cuisine.
